Tonight’s dinner: roasted butternut squash and balsamic brussels sprouts on mixed greens. Nala just ate but she’s hoping for a few bites anyways!
I made detox kale and barley soup for dinner.
Nala: Mmm… that smells good. Can I have some?
Dinner: Stuffed acorn squash.
(Korean rice mix filling - brown rice, black rice, glutinous rice, dried dates, black beans, chopped walnuts and chopped almonds)
In the oven now, to be served along-side truffle salted salmon.
Today’s lunch: Office-made salad.
Like home-made, but in the office. I love having a mini-fridge at my desk.
Salad greens, tofu, avocado, tomatoes.
I also made a vegan cake yesterday. Chocolate cake with chocolate ganache, filled with more ganache and plum jelly. Topped with a dusting of powdered sugar.
Simple. Decadent. Delicious.
I get home and my dog happily greets me. She’s a quiet dog but she shows her excitement by sitting up on her back legs and wagging her tail. When I lean in to pet her, she tries to jump up and lick my face. It’s good to be home.
It’s still early, it’s quiet and peaceful. I decide it’s a good day for baking, and start pulling out the ingredients to make peanut butter cookies - I’ve had a serious obsession with peanut butter lately. The oven is preheating and I begin incorporating the ingredients, thinking… imagining how they will taste when done. They bake, I pull them out and let them cool. They have a wonderful rustic look to them, and are just as delicious as I imagined them to be.
